My Salad Addiction and MPM

Some of you may know this, especially if you talk to my husband, I LOVE to put just about any leftovers on top of lettuce. Taco meat, bbq meat, kid's leftover chicken strips or their "dip" egg remnants. It is a great way to jazz up a salad and give variety to my lunches. 

Today I spied a half a grilled burger waisting away alone in the fridge. It was a perfect contender for my salad. Man don't grilled burgers just make you think of summer and long, sunny, warm days! 

After assembling my salad I decided the usual Ranch dressing just wasn't going to cut it today. I need more of a BBops Burger dressing. 
I ended up mixing:
1 tsp Light Mayo
1 tsp Ketchup
1/2 tsp Mustard
Water (until desired consistancy)

In my opinion it was perfection! It used up a leftover and satisfied the burger craving.

MPM- Meal Planning Monday

Our menu for the week...

Monday- Grilled burgers and Veggies, with Chick-Pea Veggie Salad with Cilantro Lime dressing
    The veggie salad was really light and summery tasting. I didn't have cilantro so I left that out, and it was still good.

Tuesday- Fried Rice
    I may try making it with Quinoa instead of Rice.

Wednesday- @ Church

Thursday- Swedish Meatballs
    with mashed potatoes for the family and mashed cauliflower for me!

Friday-  Taco Bake

What's For Dinner?

I took a big step in the direction of getting myself healthy, aside from my Just Dance battles with Gabs, I am doing the Advocare 24 day Challenge. In taking this challenge I am trying to eat/cook cleaner, healthier meals. If I am brave enough I will share my results!

Yummy Nummies...

Mr. J-man needed to take snack to school today. I have loved providing snack this year, because I can make/bake the snack! That was one thing I looked forward to doing for my kids when they got into school. Once he starts Kindergarten I won't be able to make treats, because unfortunately in our school system homemade snacks are not allowed.


When I was making this snack mix, my house smelled like I was baking cinnamon rolls. It was like heaven! The perks of this recipe are that you can use whatever cereal you have on hand and it is all done in the microwave.


Cinnamon Snack Mix
(adapted from www.makeit-loveit.com)

  • 8 cups popped popcorn
  • 4 cups cereal (Chex, Cherrios, Kix, whatever you have on hand)
  • 6 Tbsp butter, melted
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon

Directions:
Combine popcorn and cereal in a large microwave bowl.  Melt butter and then drizzle evenly over popcorn/cereal mixture.  Then sprinkle sugar and cinnamon evenly over top, tossing and stirring as you go.  Then, place the bowl in the microwave for one minute and then remove and stir.  Then, microwave for 30 seconds, remove, stir again, microwave for 30 seconds more, and then stir once more.  Then evenly spread on wax paper and let cool.


For the Popcorn, I pop it in the microwave using the blow-your-mind-microwave-popcorn technique!

Yes, I know it has been almost 2 months since I last posted. The holidays and finishing the basement got the better of me. Things are starting to get back to normal now that everyone is back in school/work and the basement is done!

A glimpse at the latest Cheese & Cracker Party at our house...
When I was younger my family had a tradition for Sunday nights, we would watch "America's Funniest Home Videos" and eat in the living room. It started out with just different kinds of cheese, crackers, sausage or deer sticks, and occasionally apples and dip. I recently decided to bring the tradition back with our family. The kids look forward to it and a little part of me does too!

Last week had to go out just like it came in... with a trip to Urgent Care! Jayden ended up with tonsillitis accompanied by a fever of 103. It is weeks like that, that make me thankful for our health insurance and being a stay at home mom!

Crazy Start...MPM

This little LEGO stick made a rough start to the beginning of our week. (I know kind of a strange thing to take a picture of, but I must document life) Monday night we made a quick trip to Urgent Care, because Gabby was poked in the ear with this stick. 

It was a frightening moment. I had never heard my child scream with such fear and agony. I knew immediately she was really hurt, the blood in her ear canal told me we needed to see the doctor. At Urgent Care we found out she indeed had a hole in her ear drum. The extent of the damage was unclear, so we needed to see the ENT first thing Tuesday. That night it wasn't easy to sleep with the fear of hearing loss looming. Gabby kept saying she couldn't hear very well out of that ear, which just made me sick. All I could do was blame myself, If only I wouldn't have made the kids pick up the legos together this wouldn't have happened.

Tuesday, I finally breathed a sigh of relief. Seeing Gabby raise her hand so many times during her hearing test, made me want to sing praise! They tested everything, and found no bone or nerve damage. She does have slight hearing loss due to the hole, but when the hole heals the hearing should return.

Now that everything has settled... here is what we are eating this week!

Monday- TatorTot Casserole
Tuesday- Spaghetti and Salad
Wednesday- McD's 
Thursday- Tuna and Noodles
Friday- Eggs and cinnamon roll muffins --Happy National Egg Day!
Saturday-
Sunday- Cheese & Cracker Party 

And by the way.... it is also National Cookie Month!
